Nothing quite says summer like a big, juicy watermelon. Besides satisfying a sweet tooth, watermelon is filled with all sorts of nutrients, and is very hydrating - which is especially important in the hotter weather.
Ingredients:
8 lb watermelon, cubed
1-2 cups of fresh mint OR arugula, chopped
1-2 cups feta cheese, crumbled or cubed
½ cup extra virgin olive oil
Juice of one lemon
Salt and pepper to taste
Directions:
Place the feta, mint/arugula, and watermelon in a large bowl and gently mix with hands or a wooden spoon
In a separate bowl, whisk olive oil, lemon juice, salt, and pepper to form a dressing
Pour dressing on top and gently mix with a wooden spoon
Place in the fridge to chill and serve
